Restaurant & Boutique Hotel Manager

The Archives is an intimate hospitality property in the heart of Galle Fort, bringing together a refined restaurant, cocktail bar, and four boutique hotel rooms. Because the operation is personal and guest-focused, every detail matters. We are looking for an experienced hospitality professional who can lead the restaurant and hotel operation as one complete guest experience. The right candidate must have strong food and beverage knowledge, a confident understanding of wine and restaurant service, and practical experience looking after guests within a boutique hotel environment. This is not an office-based management position. The successful candidate will be expected to be visible on the floor, involved in daily service, close to the team, and willing to lead by example.

WHAT WE ARE LOOKING FOR:

• Proven management experience in an upscale restaurant, refined dining environment, boutique hotel, or similar hospitality operation
• Strong knowledge of food, wine, beverage service, menu recommendations, and sequence of service
• Confidence managing the restaurant floor, service flow, reservations, and guest relations
• Experience handling boutique hotel reservations, pre-arrival communication, check-ins, check-outs, and guest requests
• Familiarity with Booking.com and similar online booking platforms
• Fluent, natural, and confident English communication
• A warm, composed, well-presented, and genuinely hospitable personality
• Strong leadership skills with the ability to train staff, maintain discipline, and hold the team accountable
• Excellent organisation, attention to detail, and commercial awareness
• The ability to remain calm, make decisions, and take ownership during demanding situations

The successful candidate should enjoy being part of the operation, building relationships with guests, supporting the team, and ensuring that both restaurant and hotel standards are consistently maintained.
